The hand-picked grapes undergo controlled fermentation with extended maceration of the grape skins, selected yeast addition, and 10 months in French oak barrels. Its intense aroma of black pepper and spice, and unctuous flavours with persistent tannin, make it an excellent accompaniment to rich, red meats including wild game.
